Hey everyone!!!!! So yesterday I decided to make you all a very special treat because you are all so awesome, however, I can't get them to you all (it's the thought that counts) so here for you is the special treat so you can make them yourselves!
Introducing.... Spectacular Fantastical Rainbow Cupcakes of Awesomeness!!!
I did this the lazy way and grabbed a cake mix. Make sure it's white cake mix and not yellow or this won't work as well. As you can see here my helper is showing off the box we used!

If you have common sense and can read... follow the instructions on the box! I change the recipe up a bit; instead of adding 3 eggs I only use 2.

Find some fun cupcake cups. Here I'm using bunny ones. My assistant insisted I use them and not the plain white ones.

We have these cool coloured bowls from IKEA. The little things beside the bowls are my baking colours. There more vivid then food colouring, but if you want to use food colouring this will still have the same effect.

Separate the cake mix evenly in all the bowls and....

COLOUR TIME!!!!!!

Now this is a bit tricky... layering the colours because you don't want them to run. The first layer doesn't have to have a lot of the cake mix, but make it as even as you can.

As you can see from the above picture the first colour I used was green then blue and so on. You can do it how every you like, but when you layer the big trick is to get all the edges first with each colour then place the colour in the middle. Also when you do each layer gently shake or bang the tray on the counter to release bubbles and even the colour out.
Once you're finished layering.. its.... BAKING TIME!!!! Usually the bake temperature is about 350 and the time is 18 min, but put a timer on for 15 and check. How you check is either take a tooth pick or fork place it in the top of a cupcake (or cake if you're doing this as a cake) and if any cake batter is on the tooth pick it still needs more time. Put the timer back on for another 5-10 minutes.

VOLA!!!! yummy rainbow cupcakes!

The after math... my assistant had a very colour face after. Someone snuck in some cake tasting... sneeky.

this is how to make it...
1kg icing sugar
1/2 cup shortening
2 tablespoons vanilla extract
2-4 tablespoons of milk
First make sure the shortening is at room temperature and place in blender and mix so it's super smooth, add the icing sugar very slowly. Then the Vanilla and then the milk. Depending on the consistency of the mix add more milk.
ALSO another delicious icing you can make is my Marshmellow yum yum icing.
2 egg whites
1/4 tsp. salt
1/4 cup sugar
3/4 Cups light Corn syrup (white syrup)
1-1/2 tsp. Vanilla
Directions:
Beat together 2 egg whites & 1/4 tsp. salt with a mixer until very frothy. Add 1/4 cup sugar very SLOWLY, and beat until smooth & glossy. SLOWLY, add 3/4 Cup light Corn Syrup, & beat until it holds stiff peaks (when you tap the mixture it should make a peek like a mountain) Gently fold in 1 1/2 tsp. vanilla.
You'll be eating JUST the icing it's sooooo good!! You can put it on toast, graham crackers ANYTHING...banana even!!
